Then Lunch Was Served…

I had a long long list of dishes I wanted mom to make me. Stuff that included but was not limited to:

- wara2 3enab (dolma)
- kibbeh
- ma7ashi (with all its derivatives and styles)
- sfee7a
- mjaddara
- burghul b7ummos
- knafeh

and of course several other hundred dishes.

So since mom knows wara2 3enab is the top priority, she rolled up her sleeves and treated me to an awesome lunch. Unfortunately since we didn’t have samneh 3arabi it didn’t taste like it should have but I just had to make do.

I mean, it is wara2 3enab for the love of God!

Mom likes to make them bite-size for reasons unexplained. It takes her weeks and months to roll enough a quantity for me to eat and yet she does it whole heartedly because, she believes, the best things in life come bite-sized.

She’s of course complimenting herself cuz she is one of them undertall peoplings.

So in any case, here are a couple of photos. Please note that this is actually my dish (I swear). I ate it in two sittings :D The other invitees (we totalled six) had to eat from another serving platter and eventually had to take a few koosas from me (damn them!)

I still can’t believe mom keeps offending me buy offering me a plate every time she makes a meal.

I DON’T EAT FROM THE PLATE, I EAT FROM THE PLATTER!

Sigh. Moms. You gotta love em :D

She’s now in Syria with her mom eating her mom’s food :D isn’t is awesome! My sister had to go to Damascus for a two-day conference and – you guessed it – she brought back wara2 3enab this time made by granny and had loads of samneh on top.

*burps*

Excuse me.

Now I wonder if I will ever find a Mrs who can make wara2 3enab….

    I suggest that you choose your future wife based on cooking skills in making those, or at least, willing in perfecting your Mom's recipe.

    My apologies for my blasphemy. I will remove the dolma promptly! LOL! Yeah there is actually a larger form of wara2 3enab, it it like 3-4 times as big as the bite sized ones. Even though they're good they're not as mdallalleen and msa2sa2een as the little ones

  • i LOVE wara2 dawaly (wara2 3inab) !!! it seriously is also on the top of my list when i go back to visit. ..... btw how dare you insult us wara2 dawaly enthusiasts by calling it dolma ? dolmas are mostly vegetarian afaik.

    Anyway, my mom also makes them bite-sized, and her mom as well. Actually, this is the only kind of wara2 dawaly i knew.
  • We once had a whole bunch of American guests over for dinner, and wara2 3inab was one of several dishes we offered them for dinner. They asked how many women had to stay up last night to roll them up, and my dad told them we used a rolling machine. He was joking, but they believed it :)

    You know one of th ebest wara dawali I ever had were these ones that came in a large round can that were taken out then boiled for a minute or 2, drained, and served.
  • I'm not familiar with Arabic food, but I love my mom's briyani dam, dhal aur chapati, purees, kebabs, gulab jamun, kheer etc. She's a fantastic cook! I love mummy! :love:

    aaakh wara2 3enab.. The best thing about wara2 3enab is that you can eat them at all occasions. They can be good for lunch, snacks, eating while driving, eating on picnics, eating before you go to sleep, breakfast- I mean literally everything.

    and I share the same habit of eating from the platter. It is tastier and more enjoyable. NO matter how much wara2 3enab mom makes, there will be no way that there will be leftovers for next day. They are just sooo....
